i like some of andrea's names.
i find it interesting that in the past three months i have talked with like three different people about opening a restaurant.
so, i'm not being an ass BUT while overall i think it is a great idea . . . i think you are stacking the deck against yourself to try it in the tenth most obese state (http://calorielab.com/news/2008/07/02/fattest-states-2008/)
although, you moved down since last year - no that isn't sarcasm.
colorado looks like the best place to try it. or HAWAII - hell, i'll help ya if you do it in HI. which btw, am i the only one who thinks it's weird that HI is thin??
but i digress . . . you could always come back to MA - we're the 4th thinnest state, which certainly explains why i feel like shit aobut myself. well, that and the fact that i'm a bitch.
anyhooo - there are some people pursuing this idea (ala Chipotle Grill) so i would start by seeing WHAT they are doing; how long they have been doing it and look up reviews .

Location-wise, i'd end up stopping at Rancho Grande just up the street. I <3 Mexican food.
I ate at Rencho once. I was not impressed. Maybe I ordered a bad dish...?
I really dig their food. I've only had one unsatisfactory dish there. Carlos' by the Wendy's near Chatters is also delicious.
What are you doing for dinner tomorrow night? Now I want Mexican. We don't have plans yet. I'm sure Mark would be up for it.
I'd have to do it another day. I'm completely broke right now. But, I recommend both restaurants.
